I also can’t believe that it’s taking so long to change the narrative on saturated fat being bad for us! Over 20 years ago that theory was debunked, but people still don’t believe it.

It just showed up at our Costco recently, and I’ve used it to sauté veggies a couple of times so far. More to come, definitely.

I continue to wonder why good writing on topics that go against the long accepted but largely debunked ideas that saturated fat and meat are bad get little comment and discussion. I want to think that people would be thrilled to learn that just eating good whole food from animals, fish and plants would be good for us. Instead, we continue to obsess over trying to be healthy by not eating things. Keep up the good work.

I haven’t used tallow except for what is in the beef already. I also haven’t seen it for sale anywhere. I will have to ask the butcher about it.

Yes. Ask for sure. When we first moved to Texas, and started using a local rancher for our beef, I asked about getting tallow. And he said they could do that for me. So now I get it from him all the time.

Tallow has so many benefits. It's a staple in my kitchen. I also really enjoy putting a little bit in my morning cup of tea. (Don't knock it until you try it!) It's very tasty.
